granola anyone?

Here is a granola recipe I just love to make. It is so simple and yummy. You can find the original recipe from Emeril here. I just modified it to suit my fancy. You can basically add or subtract whatever you like. Add it to a bowl of vanilla yogurt and you're in business!

Emeril's Granola

3 cups old-fashioned oats
1 cup slivered almonds
1/2 cup crushed walnuts or pecans
1/2 teaspoon cinnamon
1/2 teaspoon salt
4 tablespoons unsalted butter
1/3 cup honey
1/2 teaspoon vanilla extract
1 bag dried blueberries
1 bag craisins or dried cherries

Preheat oven to 325*

In a large bowl, stir oats, nuts, cinnamon and salt.

In small saucepan, melt butter with honey over low heat, stirring constantly. Add vanilla and pour butter mixture over oat mixture and stir until well combined.

On a large baking sheet, spread the granola evenly in a thin layer. Bake, stirring every 5 minutes to keep from sticking or burning. Bake until golden brown and crisp, about 20 minutes.

Let the granola cool on baking sheet. Add back to bowl and stir in dried fruits. Granola may be stored in airtight container at room temperature for up to 1 week. Makes about 6 cups.

YUMMY! I'm not a huge fan of yogurt, but add in this granola and I just might change my mind.

I'm going to try it next week...maybe Josiah would enjoy eating it for a snack (it would be a welcome change from the usual Goldfish or cheesestick).
